Betty’s Banana Nut Bread

- 3 Tbsp. sour milk
Ingredients:
- ½ cup Simple Truth Organic™ Salted Butter, softened
- 1 cup Simple Truth Organic™ Granulated Sugar
- 2 eggs
- 2 cups Simple Truth Organic™ Unbleached All-Purpose Flour
- 1 tsp. salt
- 1 tsp. baking soda
- 3 ripe bananas
- 1 cup Simple Truth™ Raw Walnut Pieces, chopped
- Cooking spray
- 3 Tbsp. sour milk
Directions:
- Preheat oven to 350°F.
- Generously grease loaf pan with cooking spray; set aside.
- In large mixing bowl, use electric mixer with paddle attachment to cream together butter and sugar. Add eggs and 3 tablespoons sour milk; continue mixing.
- In another large mixing bowl, combine flour, salt and baking soda. Add flour mixture to butter/sugar mixture; mix to combine. Stir in bananas and nuts by hand.
- Pour mixture into prepared loaf pan. Bake 60 minutes or until toothpick inserted in center comes out clean.
- Cool on wire rack. Use knife to loosen sides; invert onto wire rack to cool completely. Cut into 10 slices.
Peanut Butter Banana Bread
This tasty, peanut-butter-glazed banana bread requires no kneading or time to rise – just mix everything together and let your oven do the hard work.

- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt

- ¼ cup butter, softened or 2 Tbsp. applesauce
- 1 cup sugar
- 2 large eggs
- 1 cup ripe bananas, mashed
- ½ Tbsp. vanilla extract

- Slowly incorporate flour, baking powder, baking soda and salt. Stir until just combined. Pour batter into prepared pan.
- Bake 1 hour to 1 hour and 10 minutes, until toothpick inserted in center of loaf comes out clean.
- Let cool completely. Remove from pan.
- In microwave-safe bowl, melt ¼ cup peanut butter. Drizzle peanut butter over banana bread.

Directions:
- Preheat oven to 350°F. Grease muffin tin or line wells with muffin papers.
- In large bowl, sift flour, baking soda, salt and nutmeg.
- In medium bowl, combine bananas, both sugars, butter, milk and egg. Stir in dry ingredients; fold in half of macadamia nuts.
- Divide batter among prepared muffin cups. Sprinkle tops of muffins with remaining nuts.
- Bake until muffins are golden brown and toothpick inserted into center comes out clean, about 25 minutes. Transfer muffins to rack and cool.
