Vanilla Latte Fat Bombs

Make a batch of these keto-friendly fat bombs and keep them in the freezer for whenever you need a little pick-me-up.

  • 2 tbsp. heavy cream
  • 1 tbsp. vanilla
  • 2 tbsp. Simple Truth™ Erythritol Blend Zero Calorie Sugar Substitute
  • 2 tsp. instant coffee crystals
  • 8 oz. cream cheese, softened
  • 4 oz. butter, softened


  • In a small bowl combine cream, vanilla, erythritol blend and coffee crystals; stirring until crystals are dissolved.
  • In a mixing bowl combine all ingredients. Using an electric hand mixer, beat on medium until light and fluffy.
  • Using 1½ tablespoon cookie scoop, divide mixture into balls and place on a parchment lined sheet or in mini muffin cup liners.
  • Refrigerate about 2 hours or until firm.
  • Store refrigerated or frozen.
