Vanilla Latte Fat Bombs

Ingredients
- 2 tbsp. heavy cream
- 1 tbsp. vanilla
- 2 tbsp. Simple Truth™ Erythritol Blend Zero Calorie Sugar Substitute
- 2 tsp. instant coffee crystals
- 8 oz. cream cheese, softened
- 4 oz. butter, softened
Directions
- In a small bowl combine cream, vanilla, erythritol blend and coffee crystals; stirring until crystals are dissolved.
- In a mixing bowl combine all ingredients. Using an electric hand mixer, beat on medium until light and fluffy.
- Using 1½ tablespoon cookie scoop, divide mixture into balls and place on a parchment lined sheet or in mini muffin cup liners.
- Refrigerate about 2 hours or until firm.
- Store refrigerated or frozen.
